Ingredients

1C raw cashew nuts

2C water

Pinch of salt

1 vanilla bean (seeds only, or 1 tsp vanilla powder)

½ cup chia seeds

2T pure maple syrup

2 slices of banana or some seasonal berries/fruit to garnish

2T nuts/seeds or granola to garnish

Directions

Blend together cashews, water, salt and vanilla until creamy and smooth. 

Pour into a mixing bowl.

Add the chia and maple syrup to the milk. Mix well with a fork/whisk to remove lumps.

Assemble the pudding by pouring the mixture into recycled glass jars, or mini Tupperware jelly tubs and cover them.

Refrigerate until set (overnight is best). Top with slices of banana or other fruit and nuts or granola.
